BROILED SALMON WITH AVOCADO & STONE FRUIT SALSA
 

Delicious meets healthy when salmon filet is broiled and topped with avocados and stone fruit.

Ingredients:

1 LB. fresh salmon (filet or steak)

1 Cup high quality soy sauce

1 clove finely chopped garlic

1/2 Cup Brown Sugar

1/2 TSP Ground Black Pepper

 
Instructions:   

1. Lightly oil baking dish with olive oil.

2. Trim salmon into 4 oz. pieces and place in baking dish.

3. Combine soy sauce, garlic, brown sugar and pepper in a bowl and stir until sugar is dissolved.

4. Pour marinade over salmon, cover and refrigerate  for about 45 minutes.

5. Preheat oven to 400° F and place salmon (uncovered in preheated  oven) for 10 - 15 minutes until cooked through.

6. Top with Avocado & Stone Fruit Salsa

 


AVOCADO & STONE FRUIT SALSA

 

Ingredients:

2 Cups finely diced stone fruit such as plums, mango, peaches or apricots

2 ripe avocados, pitted, peeled and cut into 1/4 — inch dice

1/4 Cup fresh cilantro, chopped

1/4 Cup  finely chopped sweet onion (like Vidalia, Walla Walla or Maui)

1 fresh Serrano or jalapeno chile, seeded and finely chopped  (optional)

2 TBSP  fresh lime juice, or to taste

 

Instructions:

1. Gently toss together all ingredients with salt and pepper to taste.
